Budding global chef
Michael made a few career false starts before finding his calling and now has big ambitions to travel the world as a top chef.
He made a few attempts at different careers, including as a funeral operative, before finding his true passion and enrolling on the Level 2 Professional Cookery college course at University College Birmingham.
“I'd heard that University College Birmingham was the best college to learn professional cookery in the entire West Midlands,” he said. “So, I was eager to apply and secure a position to learn as much as possible.”
In just a year of study, Michael has done some incredible placements to give experience in industry. “I went to two different fine dining restaurants at the same time, so there was a lot of pressure. I went to Hampton Manor’s Grace & Savour with David Taylor and then Smoke with MasterChef champ Stuart Deeley.
“The best part about learning at University College Birmingham is that the chef lecturers are so experienced and offer so much advice. They not only benefit your academic learning, but also your extracurricular activities outside college.
“I now plan to go onto the Level 3 and then progress to university. After that, I plan to get some industry experience and go abroad to places such as France, Italy or Japan to learn more cultural techniques and skills, skills I can add to my arsenal to make me a better chef.”
