Brad rose from humble beginnings working as a kitchen porter in his local pub to become renowned chef director of a Michelin-starred kitchen.

While he enjoyed cooking, he had never considered himself a skillful chef until he enrolled at University College Birmingham: "The facilities even then were great and now they are amazing. It is the number one food college in the country. Going there after school I felt comfortable. I totally got it.,” he enthused.

After leaving the college of food, he worked in Menorca and Marseille where he further honed his craft and garnered an appreciation for flavours and ingredients from around the world.

Returning to the UK, he worked across a range of pubs and restaurants before opening Carter's of Moseley with his partner, Holly, in 2010.

With a senior staff hand-picked from fellow University College Birmingham culinary arts graduates, Carter's drew widespread acclaim and a number of awards, culminating in their being honoured with a Michelin star in 2015.

“I always look to the college of food for new chef talent because we’re sure of the quality we’re going to get from the graduates,” said Brad.

“I have such a good relationship with the University. They know what I am looking for in the kitchen. The training there is excellent."
